I have been slacking in the freezer stocking arena. Like really slacking. As in, I just used up the last of my lunch time stash. Which I have not allowed to happen in a long time.
You see, we have had ants in our kitchen on and off for the last 6 weeks or so. If you have ever had ants in your kitchen while trying to make a big batch of something, it can really take the wind out of your sails. They get into everything. So, I have been avoiding the kitchen when I can. I’m still in there all the time preparing food for my family, but I don’t have much on back-up.
Then something happened to remind me of one of the many wonderful reasons why I have a stash of pre-made food in the freezer. I randomly woke up at 3 AM the other night. I didn’t feel sick and my mind wasn’t stuck on anything. I was just awake. I lay in bed wondering when I was going to fall asleep. By 3:30 AM, I accepted defeat and went downstairs. I made a pot of coffee and started cleaning the kitchen.
A few minutes later, my husband’s phone rang. This was about 3:45 AM. I walked over to it and saw it was his work and assumed they must be looking for someone to work overtime (he works 12 hour shifts, so he would have been awake and leaving for work had he been schedule to work that day). I ignored the call and went back to my coffee. A few minutes later, they called again. And again. I knew something was up, so I headed upstairs and work him up. He called work and it turns out that he had mixed up his overtime schedule and was scheduled to work. He jumped in the shower and I set out to making him coffee, breakfast, lunch as fast as I could.
After starting a new pot of coffee, I went out to the garage freezer to discover the last of my lunch-time freezer stash. Two calzones and a jar of chicken tortilla soup. I was relieved – it least I cold do something to alleviate the inevitable stress my husband was feeling that morning. I threw the soup and calzones in his lunch box along with some cereal and milk. I was just filling up his travel mug with coffee as he came down stairs. He grabbed his coffee and lunch box and left – making it to work on time.
And this is why I stash my freezer. So my husband (or I) can just grab something on our way out. So we don’t have to pay extra to eat out (or delivery in his case since he can’t leave work once he’s there). So we don’t have to depend on convenience foods that are packed full of preservatives and chemicals. So we can control what goes into our bodies and I can take a shift off of cooking.
We brought our second freezer when I was pregnant with our second child. I filled that thing to the brim before her arrival and have been trying to keep it at least 1/2 full since then. I’m going to get back to that. Starting today. Today, I am just making brown bag burritos, but I am making a pact with myself to continue to make a little bit of extra here and there and dedicate at least one nap time per week to stocking my freezer.
It gives me peace of mind. So I’m doing it.
