Peaches are one of my very favorite fruit, ever. I love eating them fresh and I love baking with them. Luckily. the house we moved into a few years ago came with a mature peach tree. So I can get my peach fix quite easily in the summer.

Air Fryer Peach Hand Pies

These peach hand pies are made with fresh, diced peaches and wrapped in fresh pie dough. It cooks up quickly in the air fryer and comes out with a perfectly buttery and flakey crust. Yum! (make sure to check out our recipe for air fryer apple hand pies, too)

How do you store hand pies?

These hand pies can be stored in an air-tight container at room temperature for up to 2 days. They can be stored in the refrigerator for up to 5 days. 

Hand pies can also be frozen for up to 3 months.

What kind of peaches should I use? 

I recommend using freestone peaches whenever possible. Free-stone peaches refer to the type of peach that easily separates the fruit from the pit. If you are unsure which peaches are freestone, you can just ask your grocer.

Frozen peaches may also be used to make these hand pies, just defrost them at room temperature before cooking.

How do you make air fryer peach hand pies?

  1. Start with two sheets of refrigerated pie dough, or make your own pie dough. I love this recipe for Mel’s Kitchen Cafe. 
  2. Let the pie dough sit out and come to room temperature.
  3. Meanwhile, combine diced peaches with sugar, vanilla, and lemon juice. Stir well. Let sit for 10 minutes. Diced peaches being stirred with a black spoon.
  4. Once your peaches have sat, drain off the juice, reserving 1 tablespoon of juice. Discard the remaining juice.
  5. Mix the 1 tablespoon juice with cornstarch until smooth.
  6. Mix it back into the peaches and stir. 
  7. Preheat air fryer to 350ºF.
  8. Using a 5-inch biscuit cutter or a 5-inch plate as a template, cut around the plate to make a 5-inch round. Continue until you run out of dough, balling it up, and rolling it out again. You will want to make 8 rounds.
  9. Fill the center of each round with a heaping tablespoon of peaches. Rounds of pie dough filled with peaches in the center.
  10. Brush water around the edges of the pie crust. 
  11. Fold the dough over to form a half-circle and use a fork to crimp the edges. A fork crimping the edges of a hand pie on a wooden cutting board.
  12. Use a sharp knife to cut three small slits in the top.
  13. Repeat with the remaining ingredients until you have 8 peach hand pies. 
  14. Spray the top of each pie with non-stick cooking spray. 
  15. Arrange hand pies in the air fryer so they are not touching (you will need to work in batches). Three uncooked hand pies in an air fryer.
  16. Air fry for 13-15 minutes, until golden brown.
  17. Carefully remove the hand pies and cook any remaining pies. A cooling rack full of hand pies.
  18. While the pies are cooling, whisk together powder sugar, vanilla extract, and milk. 
  19. Use a fork to drizzle the icing over the peach hand pies. A cookie sheet filled with peach hand pies that are drizzled with icing.

Air Fryer Peach Hand Pies Recipe

Ingredients
  

  • 2 refrigerated unbaked pie crusts
  • 2 large peaches diced
  • 1/2 cup granulated sugar
  • 2 tablespoons lemon juice
  • 1 1/2 teaspoons vanilla extract divided
  • 1 1/4 teaspoon cornstarch
  • 1 cup powdered sugar
  • 1/4 cup milk

Instructions
 

  • Take your pie dough out of the refrigerator and let it sit until it comes to room temperature.
  • Meanwhile, combine the diced peaches with the granulated sugar, lemon juice, and 1 teaspoon vanilla extract. Stir well and let it sit for 10 minutes. 
  • Once your peaches have sat, drain off the juice, reserving 1 tablespoon of juice. Discard the remaining juice.
  • Mix the 1 tablespoon juice with the cornstarch until smooth.
  • Mix the cornstarch slurry back into the peaches and stir. 
  • Preheat your air fryer to 350ºF.
  • Using a 5-inch plate as a template, cut a 5-inch round in the pie crust.
  • Continue until you run out of dough, balling it up, and rolling it out again. You will want to make 8 rounds.
  • Fill the center of each round with a heaping tablespoon of peaches.
  • Brush water around the edges of the pie crust. 
  • Fold the dough over to form a half-circle and use a fork to crimp the edges.

  • Repeat with the remaining ingredients until you have 8 peach hand pies. 
  • Spray the top of each pie with non-stick cooking spray. 
  • Arrange hand pies in the air fryer so they are not touching (you might need to work in batches).
  • Air fry for 13-15 minutes, until golden brown.
  • Carefully remove the hand pies and cook any remaining pies.
  • While the pies are cooling, whisk together powder sugar and remaining 1/2 teaspoon vanilla extract.
  • Slowly whisk in the milk until a thin icing has been made.
  • Use a fork to drizzle the icing over the peach hand pies. 
  • Serve and enjoy!

Notes

Hand pies can be stored in an air-tight container at room temperature for 2 days and in the refrigerator for up to 5 days. They can be frozen for up to 3 months.
Frozen and defrosted peaches made be used in place of fresh peaches.
Freestone peaches work best, if possible.

    I made these with my homemade pie crust, and flavored the frosting with a tiny bit of the drained peach juice. Outstanding!
