For our family, Sunday breakfasts are all about that special breakfast. We make pumpkin pancakes, chocolate chip waffles, or french toast. It’s usually something sweet. Sometimes we make eggs and bacon, but I always try and make something hot.

Kid-friendly Whole Grain Pancakes

It’s one of the family traditions we’ve started and my kids’ love, so I really try and stick with it. This week, Katie showed interest in helping with the whole grain pancakes, so I opened up the step stool and let her dig in.

Such a good little helper. She has been really into cooking with us lately, so I’ve been trying to include her when she asks. Katie is 23 months. She loves helping to get ingredients in and out of the pantry and refrigerator, pouring, measuring, and mixing. Those tend to be her tasks as they are the ones I’m most comfortable with at this time.

Her newfound interest in cooking has pushed me to teach William some new tricks (age 3.5).

Today, William scooped and poured the batter on to our griddle. He also flipped pancakes with me. This was his first time working with the griddle, so I stayed next to him and reminded him about the heat factor. As he gets more comfortable, I am okay with backing off and letting him do his thing.

Remember when you’re cooking with your kids, that the end result does not need to be beautiful. Try and let them do as much independence as possible.

As you can see, our pancakes are not perfectly round. It doesn’t matter. They were still delicious.

Whole Grain Pancakes

Ingredients
  

  • 1 1/2 cups whole milk
  • 4 tablespoons white vinegar
  • 1 cup all-purpose flour
  • 1 cup white whole wheat flour
  • 2 tablespoons flax seed meal
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 2 eggs
  • 4 tablespoons honey
  • 4 tablespoons butter melted
  • Cooking spray
  • Pure maple syrup for serving

Instructions
 

  • Mix the milk and vinegar in a medium bowl and let stand 5 minutes.
  • Meanwhile, whisk together the flour, flax seed meal, baking soda, baking powder, and salt in a large bowl.
  • Add the egg, honey, and melted butter into the bowl of milk and mix until combined.
  • Make a well in the bowl of the dry mixture and pour the wet mixture into the center.
  • Fold the ingredients together until everything is moistened, but still lumpy.
  • Preheat your griddle or pan over medium high heat. Grease with cooking spray.
  • Pour 1/4 cup sized portions of pancakes mix onto your greased griddle.
  • Let cook until the top of the pancake begins to bubble and the bottom starts to brown. Flip and cook on the other side.
  • If working in batches on the stove, place cooked pancakes on a cookie sheet in an oven set to keep warm.
  • Serve with pure maple syrup
