This recipe for breakfast casserole with crescent rolls was originally shared with me during my single days of working in the city. I was attending a Christmas morning brunch and was supposed to bring a dish that could feed a crowd. I was not much of a cook in those days.
A friend mentioned she had a recipe for an easy and filling breakfast casserole. Her dad made it every year on Christmas morning while she was growing up. In fact, he made it the night before and refrigerated it.
This was a totally new concept for me! I was excited to be able to bring an actual home-baked meal and not have to stress over making it first thing in the morning.
How to make a breakfast casserole with crescent rolls
- Crescent Rolls: Layer crescent rolls on the bottom of a greased casserole dish.
- Hash Browns: Top crescent rolls with store-bought hash browns in an even layer.
- Sausage: Top hash browns with sausage links, spacing them out evenly so each serving has a sausage link.
- Eggs: Pour eggs over casserole.
- Bake: Bake uncovered for 30 minutes.
- Cheese: Remove from oven, add shredded cheese, and return to oven until cheese is melted.

Yes. Prepare the breakfast casserole with crescent rolls as directed. Let it fully cool. Cover with two layers of aluminum foil and freeze up to 3 months. Defrost overnight in the refrigerator and reheat in the oven.
