We make this roast beef with a boneless chuck roast. It’s one of my favorite cuts of beef to stock up on when it goes on sale and I am always looking for new ways to cook it. How long does it take to cook meat in an instant pot?

It takes about 20 minutes per pound to cook beef in the instant pot. This does not include the time it takes for the pot to come to pressure (about 10 minutes) and the time for a natural release (20-30 minutes). Don’t skip the natural release. Just think of it as letting the meat rest. If you quick release the pressure, it will suck the moisture right out of your meat. And you want your roast beef juicy not dry!

This recipe for instant pot roast beef has a cook time of 45 minutes. Plus 5 minutes to sear the beef and 5 minutes to whip up the gravy at the end. Luckily, this recipe is mostly hands off (5 minutes at the beginning and end). The rest of the time can be spent with family or prepping a side dish.

How to make roast beef in the instant pot?

  1. Rub a 3 pound chuck roast with seasonings. Piece of beef rubbed with spices.
  2. Heat oil inside your instant pot and let it het up.
  3. Sear the meat on all sides. Meat being seared inside instant pot.
  4. Remove the meat and deglaze the pot with some broth. 
  5. Add the meat back in and cook for 45 minutes on high pressure. Beef in instant pot.
  6. Natural pressure release. 
  7. Remove the meat and add a cornstarch slurry to the broth. 
  8. Bring the broth to a boil to thicken. Instant pot with beef broth and wooden spoon.
  9. Serve roast beef with gravy.

How long does cooked roast beef last in the fridge?

Cooked roast beef stays fresh in the fridge up to 4 days. If you want to preserve it for longer than that, you will need to freeze it.

Can you freeze pressure cooker roast beef?

Yes, you can freeze fully cooked roast beef. Let it cool to room temperature. Slice, and freeze in a freezer safe container. Make sure you label and date the container so you know what it is if you forget about it for months on end. Believe me – mystery meat is not appetizing. But a frozen roast beef ready to be reheated on a busy night is very, very appetizing.

Ingredients
  

  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 teaspoon parsley flakes
  • 1/2 teaspoon onion powder
  • 1 3-pound boneless chuck roast
  • 1 tablespoon olive oil
  • 2 cups beef broth mixed with
  • 1/4 cup cold water
  • 1 tablespoon cornstarch

Instructions
 

  • Mix together the garlic powder, salt, pepper, parsley, and onion powder.
  • Pat dry the beef roast and rub on the spice mixture.
  • Press the saute button and add the oilive oil.
  • Once the instant pot says "HOT" add the beef roast and sear on all sides.
  • Remove the roast and set aside.
  • Pour in the beef broth and deglaze the bottom of the pot. Use a wooden spoon to scrape up any bits of food stuck to the bottom of the pot.
  • Press the cancel button.
  • Place the roast back inside the instant pot.
  • Close the lid and set the pressure release valve to sealing.
  • Press the manual or pressure cook button and set to 45 minutes.
  • Natural pressure release.
  • Remove the meat from the pot and shred with two forks.
  • Whisk together the cold water and cornstarch.
  • Pour the cornstarch slurry into the insant pot.
  • Press the saute button and bring the broth to a boil.
  • Let boil 5 minutes, unti thickened, to make a gravy.
  • Serve roast beef with gravy.

  1. Accidentally put the cornstarch and water in with the roast and beef broth…too late now since it’s pressure cooking πŸ˜΅β€πŸ’«

  2. I followed this recipe to a β€œt” every step. My roast was overdone and not shreddable and my gravy would not thicken. I was really disappointed.
