Make Ahead Scrambled Eggs are perfect for meal-prep. This make-ahead breakfast freezer meal is perfect for busy mornings and can be customized to your tastes.

Ingredients

  • 12 eggs
  • 4 turkey sausage links sliced
  • 2 green onions sliced
  • 1/2 cup cheese
  • salt and pepper

Instructions

  • Preheat your oven to 350 degrees.
  • Grease a muffin tin and crack one egg into each opening.
  • Lightly whisk with a fork and place sausage and green onions in the center of each egg. Season with salt and pepper.
  • Bake 18 minutes, or until eggs are set.
  • Set oven to broil.
  • Sprinkle each baked egg with shredded cheese.
  • Return to oven for 30 seconds, just until cheese is melted.
  • Let cool.
  • Place the make ahead scrambled eggs onto a lined cookie sheet in freezer.
  • Once frozen, slide the make ahead scrambled eggs into a gallon sized freezer bag.
  • Label and freeze up to 1 month.
  • To reheat: cook in the microwave for 2 minutes.
