Green Beans with Caramelized Shallots

- 1 pound green beans washed and trimmed
- 2 tbsp olive oil
- 1 shallot diced
- salt and pepper
Fill a pot with 1 inch of water and fit with a steamer basket. Bring water to a boil.
Add green beans to steamer basket and cover. Steam 6 minutes.
Remove green beans from heat.
Heat the olive oil in a large skillet over medium-high heat.
Add shallots and green beans to heated olive oil.
Season with salt and pepper.
Cook, stirring occasionally until the shallots are golden brown. About 6 minutes.
Serve immediately. Refrigerate any leftovers.
