- 5 Roma tomatoes
- 1/4 cup olive oil
- 1 teaspoon salt
- 1 teaspoon pepper
Preheat your oven to 425 degrees. Line a cookie sheet with foil and set aside.
Slice the tomatoes 1/2 inch thick and arrange in a single layer on the cookie sheet.
Brush each tomato with olive oil and sprinkle with salt and pepper.
Bake for 20-25 minutes until the tomatoes start to wrinkle and are fragrant when the oven is opened.
Serve warm as an appetizer or side dish.
