Ingredients

  • 3 large zucchini sliced 1/4 inch thick
  • 2 tbsp olive oil extra virgin
  • 1/4 tsp garlic powder
  • 1/8 tsp salt
  • 1/8 tsp pepper
  • 1/4 cup Parmesan cheese grated

Instructions

  • Preheat oven to 350 degrees.
  • Arrange sliced zucchini rounds in a single layer on a cookie sheet. 
  • Brush with olive oil and sprinkle with garlic powder, salt, and pepper.
  • Bake for 20 minutes, until fork tender.
  • Remove zucchini rounds from oven and set the oven to broil.
  • Sprinkle each zucchini round with parmesan cheese 
  • Return them to the oven just until the cheese is melted and golden brown, about 30 seconds.
  • Serve immediately.
