- 4 russet potatoes thinly sliced
- 3 tablespoons butter
- 3 tablespoons all-purpose flour
- Salt and pepper to taste
- 1 cup milk
- 1 cup cream
- 2 cups shredded cheddar cheese
Preheat oven to 400°F.
Arrange the thinly sliced potatoes in a casserole dish.
In a saucepan, melt butter over medium heat. Mix in the flour, salt, and pepper, and stir constantly for one minute.
Slowly stir in milk and cream. Cook until the mixture has thickened.
Stir in cheese and continue stirring until melted.
Pour cheese sauce over the potatoes, and cover the dish with aluminum foil.
Bake for 1 hour.
Remove foil and bake for another 15-30 minutes.
