Whole Grain Pancakes

Ingredients

  • 1 1/2 cups whole milk
  • 4 tablespoons white vinegar
  • 1 cup all-purpose flour
  • 1 cup white whole wheat flour
  • 2 tablespoons flax seed meal
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 2 eggs
  • 4 tablespoons honey
  • 4 tablespoons butter melted
  • Cooking spray
  • Pure maple syrup for serving

Instructions

  • Mix the milk and vinegar in a medium bowl and let stand 5 minutes.
  • Meanwhile, whisk together the flour, flax seed meal, baking soda, baking powder, and salt in a large bowl.
  • Add the egg, honey, and melted butter into the bowl of milk and mix until combined.
  • Make a well in the bowl of the dry mixture and pour the wet mixture into the center.
  • Fold the ingredients together until everything is moistened, but still lumpy.
  • Preheat your griddle or pan over medium high heat. Grease with cooking spray.
  • Pour 1/4 cup sized portions of pancakes mix onto your greased griddle.
  • Let cook until the top of the pancake begins to bubble and the bottom starts to brown. Flip and cook on the other side.
  • If working in batches on the stove, place cooked pancakes on a cookie sheet in an oven set to keep warm.
  • Serve with pure maple syrup
