Mix the milk and vinegar in a medium bowl and let stand 5 minutes.
Meanwhile, whisk together the flour, flax seed meal, baking soda, baking powder, and salt in a large bowl.
Add the egg, honey, and melted butter into the bowl of milk and mix until combined.
Make a well in the bowl of the dry mixture and pour the wet mixture into the center.
Fold the ingredients together until everything is moistened, but still lumpy.
Preheat your griddle or pan over medium high heat. Grease with cooking spray.
Pour 1/4 cup sized portions of pancakes mix onto your greased griddle.
Let cook until the top of the pancake begins to bubble and the bottom starts to brown. Flip and cook on the other side.
If working in batches on the stove, place cooked pancakes on a cookie sheet in an oven set to keep warm.
Serve with pure maple syrup
