Instructions
Preheat oven to 350ºF.
Grease and line a loaf pan. Set aside.
Combine the bananas, greek yogurt, and egg in a large bowl. Mix well.
Pour the sugar into the banana mixture and stir until fully combined.
In a small bowl, combine the flour, baking soda, cinnamon, nutmeg, and salt.
Add the dry mixture to the wet mixture and stir until just blended.
Fold in the carrots, pecans, coconut, and raisons.
Pour the batter into the prepared loaf pan and tap or shake the pan on the counter to smooth down to an even layer.
Bake for 50-60 minutes until an inserted toothpick comes out clean.
Let cool for 20 minutes prior to serving.
Notes
Leftovers can be stored at room temperature in an air tight container, up to 3 days.
