Keto Cauliflower Mashed Potatoes Recipe

Whip up a batch of these Keto cauliflower mashed potatoes tonight! They are just as creamy as regular mashed potatoes with way less carbs!

Ingredients

  • 1 large head cauliflower cut into florets
  • 1/2 teaspoon salt
  • 1/3 cup grated parmesan cheese
  • 1/3 cup sour cream
  • 2 tablespoons unsalted butter
  • 1 tablespoon dried parsley
  • 1/2 teaspoon salt

Instructions

  • Place cauliflower florets in a large stock pot and cover with water and 1/2 teaspoon salt.
  • Bring to a boil. Cover and boil for 10 mintues.
  • Remove from heat and drain water.
  • Lightly mash cauliflower using a potato masher.
  • Blend cauliflower until creamy using an immersion blender.
  • Fold in parmesan cheese, sour cream, butter, parsley, and remaining 1/2 teaspoon salt.
  • Mix until creamy and butter is melted.
  • Serve hot.
