Christmas Breakfast Casserole Recipe

Celebrate Christmas with this extra festive Christmas breakfast casserole! This make ahead breakfast casserole is filled with hash browns, diced ham, eggs, and yummy cheese!

Ingredients

  • 1 15-ounce bag country-style hash browns
  • 2 cups diced ham
  • 2 cups shredded sharp cheddar cheese divided
  • 10 large eggs
  • 1/4 cup heavy cream
  • 1 tablespoon mild hot sauce
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup diced red bell pepper
  • 1/2 cup diced green bell pepper

Instructions

  • Preheat oven to 350 degrees.
  • Spread the hash browns in a 9x13 casserole dish.
  • Top the hash browns with ham and 1 1/2 cups shredded cheese.
  • In a medium bowl, whisk together the eggs, heavy cream, hot sauce, Italian seasoning, salt, and pepper.
  • Pour the egg mixture over the casserole.
  • Cover the casserole dish with foil and bake for 40 minutes.
  • Remove the casserole from the oven and remove the foil.
  • Increase oven temperature to 425 degrees.
  • Top with remaining 1/2 cup cheese and bell peppers.
  • Bake uncovered for an additional 15 minutes, until casserole is set in the middle and no longer jiggly.
  • Serve warm.

Notes

  • May be refrigerated up to 4 days and frozen up to 3 months.
  • Ham may be substituted for bacon or breakfast sausage.
