- 1 15-ounce bag country-style hash browns
- 2 cups diced ham
- 2 cups shredded sharp cheddar cheese divided
- 10 large eggs
- 1/4 cup heavy cream
- 1 tablespoon mild hot sauce
- 1 teaspoon Italian seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup diced red bell pepper
- 1/2 cup diced green bell pepper
Preheat oven to 350 degrees.
Spread the hash browns in a 9x13 casserole dish.
Top the hash browns with ham and 1 1/2 cups shredded cheese.
In a medium bowl, whisk together the eggs, heavy cream, hot sauce, Italian seasoning, salt, and pepper.
Pour the egg mixture over the casserole.
Cover the casserole dish with foil and bake for 40 minutes.
Remove the casserole from the oven and remove the foil.
Increase oven temperature to 425 degrees.
Top with remaining 1/2 cup cheese and bell peppers.
Bake uncovered for an additional 15 minutes, until casserole is set in the middle and no longer jiggly.
Serve warm.
- May be refrigerated up to 4 days and frozen up to 3 months.
- Ham may be substituted for bacon or breakfast sausage.
