Baked Caprese Chicken

- 4 boneless skinless chicken breasts
- 4 tablespoons olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon oregano
- 6 ounces mozzarella cheese sliced 1/4 inch thick
- 3 large tomatoes sliced 1/2 inch thick
- 1/4 cup chopped basil
Preheat oven to 425°F. Grease a 9x9 square baking dish and set aside.
Brush the olive oil on both sides of the chicken breasts and place them in the baking dish.
Sprinkle the chicken breasts with salt, pepper, and oregano.
Bake chicken for 15 minutes.
Remove the chicken from the oven and add mozzarella and tomato slices on top. Return chicken to the oven for an additional 10 minutes, or until the chicken reaches an internal temperature of 165°F.
Remove the baked chicken caprese from the oven. Sprinkle each piece of chicken with fresh basil and serve!
You can substitute the fresh tomato for a 16-ounce can of diced tomatoes. Simply pour the canned tomatoes over the chicken at the same time you would add the fresh tomatoes.
If you cannot get your hands on fresh basil, 1 tablespoon of dried basil can be sprinkled over the chicken before serving.
Shredded mozzarella may be used in place of sliced mozzarella. However, it will not melt quite as smoothly.
