Winter Salad with Seven Grain Crispy Tenders

This delicious winter salad is packed with mixed greens, red onions, tart green apples, and topped with walnuts, raisons, and blue cheese crumbles. Its paired with filling seven grain crispy tenders, making it the perfect lightened up lunch.

Ingredients

  • 4 Gardein Seven Grain Crispy Tenders
  • 1 5-ounce bag mixed greens
  • 1/2 red onion sliced
  • 1/2 green apple cut into strips
  • 1/4 cup blue cheese crumbles or vegan blue cheese
  • 1/4 cup dried cranberries
  • 1/4 cup walnut pieces
  • 1/3 cup balsamic vinaigrette

Instructions

  • Preheat oven to 430°F.
  • Line a baking sheet with a silicone baking mat or foil.
  • Place crispy tenders on baking sheet and bake in oven for 18 minutes, flipping after 9 minutes.

  • Combine the mixed greens, onion, apple, blue cheese, cranberries and walnuts in a large bowl. Toss to mix.
