Preheat your oven to 350 degrees, grease a jelly roll pan and set aside.
In a large bowl, cream together the 1 cup butter, brown sugar, and granulated sugar.
Add the vanilla and eggs, mixing after each addition.
Slowly mix in the flour, followed by the rolled oats, baking soda, and salt.
Continue mixing and add in 1 cup peanut butter.
Evenly spread the batter into the base of the jelly roll pan.
Bake for 15 minutes.
Working quickly, place heaping scoops of the remaining 1 cup of peanut butter across the top of the cookie bar.
Gently spread it across the peanut butter bar as it melts. Let cool.
While the peanut butter bars are cooling, make the chocolate frosting by whisking the powdered sugar, 1/2 cup softened butter, milk, cocoa powder, and vanilla together.
Spread the chocolate frosting across the peanut butter bars once they are full cooled.
Store any uneaten bars in an air tight container at room temperature.
