Ingredients
2tablespoonsMazola Corn Oil
1poundturkey Italian sausagecasing removed
1/2medium yellow onionchopped
2garlic clovesminced
4cupschicken broth
1poundwhole wheat penne pasta
115-ounce can diced tomatoes
16-ounce can tomato paste
1/2cupfresh basilroughly chopped
1tablespoonItalian seasoning
3/4teaspoonsalt
1/4teaspoonblack pepper
Grated parmesan cheese for topping
Instructions
Heat corn oil in a large skillet over medium high heat.
Mix in sausage and onion.
Cook until sausge is browned, braking it up into chunks as it cooks, about 5 minutes.
Mix in garlic and cook until fragrant. About 1 minute.
Pour in chicken broth, pasta diced tomatoes, tomato paste, basil, italian seasoning, salt, and pepper.
Raise heat to high. Mix until tomato paste is evenly distributed.
Once broth is boiling, reduce heat to medium.
Let simmer, stirring constanty, until pasta is al dente and liquid is almost absorbed. 10-12 minutes.
Remove from heat and serve.
Top with parmesan cheese, if desired.
Notes
Leftover pasta can be stored in the refrigerator, up to 3 days.
