Whip up a batch of these zesty red potatoes. They are made with a simple combination of baby red potatoes, olive oil, and spices.

Ingredients

  • 2 pounds small red potatoes
  • 3 tablespoons olive oil
  • 2 teaspoons garlic powder
  • 2 teaspoons chili powder
  • 1 teaspoon salt
  • 1/4 teaspoon cayenne pepper

Instructions

  • Preheat oven to 425 degrees.
  • Line a rimmed cooking sheet with tin foil and set aside.
  • Slice the potatoes 1/2 inch thick.
  • In a large bowl, toss the potatoes with the olive oil and spices.
  • Arrange potatoes in an even layer on the cooking sheet.
  • Roast until fork tender, about 25 minutes.

Notes

Golden potatoes may be substituted for red potatoes
