- 1/4 cup olive oil
- 1 teaspoon paprika
- 1/2 teaspoon ground thyme
- 1/2 teaspoon black pepper
- 1/2 teaspoon salt
- 1/2 teaspoon garlic powder
- 8 chicken drumsticks
- 2 pounds russet potatoes cut into (1-inch) chunks
- 3 carrots peeled and cut into (1-inch) chunks
Preheat oven to 400 degrees.
Line to sheet pans with foil and spray cooking spray. Set aside.
Whisk together the olive oil, paprika, thyme, pepper, salt, and garlic powder.
Rub 1/2 of the olive oil mixture on the chicken drumsticks.
Place vegetables in a large bowl and drizzle with remaining olive oil mixturel. Toss to coat.
Cook for 50 to 60 minutes or until the chicken is cooked through and the vegetables are fork tender.
