Ingredients

  • 1/4 cup olive oil
  • 1 teaspoon paprika
  • 1/2 teaspoon ground thyme
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt
  • 1/2 teaspoon garlic powder
  • 8 chicken drumsticks
  • 2 pounds russet potatoes cut into (1-inch) chunks
  • 3 carrots peeled and cut into (1-inch) chunks

Instructions

  • Preheat oven to 400 degrees.
  • Line to sheet pans with foil and spray cooking spray. Set aside.
  • Whisk together the olive oil, paprika, thyme, pepper, salt, and garlic powder.
  • Rub 1/2 of the olive oil mixture on the chicken drumsticks.
  • Place vegetables in a large bowl and drizzle with remaining olive oil mixturel. Toss to coat.
  • Cook for 50 to 60 minutes or until the chicken is cooked through and the vegetables are fork tender.
