Sheet pan chicken and potatoes is an easy one-pan baked chicken recipe. You are going to love how quick and easy it is to make with very little clean-up!

I love an easy chicken dinner. Some of my favorites are Instant Pot Chicken Fajitas, Baked Chicken Capreseinstant pot Hawaiian chicken, one pan baked teriyaki chicken and pineapple, and creamy pesto chicken.

Can I bake chicken and potatoes at the same time?

Yes. It is best to use bone-in chicken when baking it next to the chicken so it doesn’t get dried out. We use chicken drumsticks in this recipe but you could also use a combination of bone-in chicken thighs and drumsticks. We also love making steak fajitas on a sheet pan.

How to make sheet pan chicken and potatoes?

  • Preheat oven to 400 degrees. Ingredients for sheet pan chicken and potatoes.
  • Line to sheet pans with foil and spray cooking spray. Set aside.
  • Whisk together the olive oil, paprika, thyme, pepper, salt, and garlic powder.
  • Rub 1/2 of the olive oil mixture on the chicken drumsticks. Chicken, potatoes, and drumsticks on a sheet pan.
  • Place carrots and potatoes in a large bowl and drizzle with remaining olive oil mixture. Toss to coat.
  • Cook for 50 to 60 minutes or until the chicken is cooked through and the vegetables are fork tender.

What kind of potatoes can I use?

This recipe calls for russet potatoes, but you could also use baby red potatoes or Yukon gold potatoes.

Can I add vegetables to this sheet pan dinner?

Yes. This recipe does include carrots, but you can certainly add an extra vegetable to this sheet pan dinner. Choose a hearty vegetable like green beans or cauliflower.
