Ingredients

  • 1/2 cup frozen chopped spinach thawed and drained
  • 8 ounces cream cheese softened
  • 1/2 cup shredded parmesan cheese
  • 1/2 cup canned artichoke hearts drained and finely chopped
  • 1/4 cup mayonnaise
  • 1/4 cup sour cream
  • 1 teaspoon minced garlic

Instructions

  • Combine the spinach, cream cheese, parmesan cheese, artichoke hearts, mayonnaise, sour cream, and minced garlic inside the crock pot. Mix until fully combined.
  • Cook on low for 3 hours.
  • Stir and serve. Serve with carrot sticks, celery, blue chips, and/or pita chips.

Notes

To drain the frozen spinach: Defrost the spinach and then wrap it in several layers of paper towels. Squeeze out the water by wringing the spinach like a towel. Repeat several times.
If the dip comes out too watery, whisk in 1 tablespoon of cornstarch into the hot dip. It will thicken as it cools.
For best results, start with softened cream cheese.
Refrigerate any uneaten portions for up to 3 days. May be frozen for up to 3 months.
