Easy Peanut Butter Cookie Recipe

Today, I’m sharing a super easy and delicious recipe for peanut butter cookies. I love the recipe because it only calls for 3 ingredients. So even when your pantry is bare, you might still be able to bake a batch of these easy peanut butter cookies.

What is the best peanut butter for cookies?

I recommend a simple creamy peanut butter for these cookies but you can use whatever you have on hand – crunch, creamy, natural, whatever!

Why do peanut butter cookies have fork marks?

I love the fork marks in peanut butter cookies because you look at them an instantly know they are peanut butter! They also make them look a little fancy without actually being a lot of work.

The reason for the fork marks? It evens out the dough so it bakes evenly. Peanut butter is super dense, so it’s not going to naturally flatten and spread like a chocolate chip cookie. We have to help it a little bit, which is why you press them down with your fork before baking.

Ingredients
  

  • 1 cup peanut butter
  • 1 cup granulated sugar
  • 1 large egg

Instructions
 

  • Preheat over to 325°F.
  • Line a baking sheet with parchment paper and set aside.
  • Combine peanut butter, sugar, and egg in a medium mixing bowl.

  • Mix well.
  • Take heaping tablespoon-sized scoops of dough and roll them into balls.
  • Place the dough balls onto the prepared baking sheet.

  • Slightly press each ball down with a fork and create a criss-cross pattern.
  • Bake for 12 minutes.
  • Remove from oven.
  • Let cool on the baking sheet for 5 minutes and then transfer to a wire rack to fully cool.
