I love using my instant pot to quickly cook up some chicken when I need it for salads during the week or meals that call for cooked chicken. This time, I was whipping up a batch of instant pot chicken enchiladas and needed shredded chicken. It was one of those days where I actually thought ahead and set up my shredded chicken to cook in the instant pot that morning.

How to cook instant pot shredded chicken
I love that I can use frozen chicken for this recipe. No need to defrost. I just throw in a couple of frozen chicken breasts with chicken stock and some salt and pepper. 30 minutes later, I have perfectly cooked chicken. It is so tender that it’s a breeze to shred with two forks. A lot of people swear by shredding their chicken with their stand mixer. It’s really not necessary for this recipe. I had all of my chicken shredded and ready to go in just a couple of minutes.
If you have fresh chicken to cook, just cut the cook time down to 20 minutes. As with most pressure cooker meat recipes, you will want to do natural pressure release for this recipe. It helps to retain the juices in the chicken and contributes to ultra tender shredded chicken.

Instant Pot Shredded Chicken
Ingredients
- 2 chicken breasts fresh or frozen
- 1 can chicken broth
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- Place chicken, chicken broth, salt, and pepper into the bowl of the instant pot electric pressure cooker.
- Close lid and set to sealing.
- For frozen chicken: cook on high pressure for 30 minutes.
- For fresh chicken: cook on high pressure for 20 minutes.
- Natural pressure release.
- Shred and use in any recipe calling for cooked chicken.
