Instant pot granola bars are an easy go-to breakfast or snack. They can be customized with whatever dried fruit or nuts you have on hand. I like to pack them in lunch boxes or serve them as breakfast on the go.

This recipe makes a very chocolaty and chewy instant pot granola bar. It is probably more on the treat side than the breakfast side but it’s ultimately up to you to decide.

The trick to making a good chewy granola bar

There are a few things to keep in mind when making instant pot granola bars. The first is the honey-butter mixture that acts as glue. You are going to melt the honey and butter down in the Instant Pot but it’s not ready just when it’s melted.

The magic happens when it starts to bubble up and darkens in color. Once it is an amber color, you can take it off the heat, or in this case, turn off your Instant Pot.

Once your “glue” is made, you are going to mix it up with a granola mixture and press it into a baking dish to set.

The trick to getting the Instant Pot granola bars to to stick together and not fall apart is to press them hard into the baking dish. If you spend a couple of minutes pressing them down, they are less likely to crumble up into granola.

Then you have to walk away and let it cool in the fridge for at least a couple of hours. I promise it will all be worth it once you get to enjoy a chocolaty chewy homemade granola bar.

When you are ready to cut them up, use a very sharp knife and run it under hot water in between cuts.

  • 1 1/2 cups rolled oats
  • 1/2 cup roasted whole almonds, chopped
  • 1/4 cup brown sugar
  • 1/4 teaspoon salt
  • 1/3 cup honey
  • 1/4 cup butter
  • 1 teaspoon vanilla
  • 1/2 cup dried cranberries
  • 3/4 cup mini chocolate chips, divided

Ingredients
  

  • 1 1/2 cups rolled oats
  • 1/2 cup roasted whole almonds chopped
  • 1/4 cup brown sugar
  • 1/4 teaspoon salt
  • 1/3 cup honey
  • 1/4 cup butter
  • 1 teaspoon vanilla
  • 1/2 cup dried cranberries
  • 3/4 cup mini chocolate chips divided

Instructions
 

  • Line an (8 x 11 Inch) baking pan with parchment paper and cooking spray. Set aside.
  • Mix together oats, brown sugar, almonds, and salt in a medium bowl (exclude 1/4 cup chocolate chips)
  • Turn instant pot to sauté. Melt butter and honey together.
  • Stir until it begins to bubble.
  • Let bubble for 2 minutes, until it starts to darken. 
  • Turn instant pot off and mix in vanilla.
  • Pour wet mixture over dry mixture.
  • Mix well.
  • Mix in cranberries
  • Mix in 1/2 cup chocolate chips. They will be melty, it’s okay.
  • Pour granola bar mixture into prepared baking pan.
  • Using a spatula, press firmly into the pan. Spend about a minute pressing it into the pan – this helps prevent them from being crumbly.
  • Pour the remaining 1/4 cup chocolate chips on top.
  • Press in again.
  • Refrigerate 2 hours.
  • Cut into rectangles and enjoy.
  • Store in an air-tight container, 5-7 days.
