This delicious winter salad is packed with mixed greens, red onions, tart green apples, and topped with walnuts, dried cranberries, and blue cheese crumbles. Its paired with filling seven grain crispy tenders, making it the perfect lightened up lunch.

I love a good salad, especially when paired with fruit and cheese. That combination over a bed of fresh greens gets me every time. But the true star of this winter salad is the Gardein® Seven Grain Crispy Tenders. They round out the salad and make it an easy meal solution that is good for our bodies and the planet.

We are not vegetarians, but I do try and incorporate meatless meals into our meal rotation. Which is why sharing this recipe with you on Meatless Monday is perfect.

Where do I find Gardein products?

I picked everything for this winter salad recipe at my local Sprouts. They had a large selection of Gardein products in their freezer section. I picked up their Gardein Seven Grain Crispy Tenders and Gardein Mandarin Orange Crispy Chick’n.

I love the fresh produce at Sprouts and they also have a good selection of vegan cheeses if you want to swap out the blue cheese for a non-dairy alternative. 

What to serve with this vegetarian winter salad recipe?

I love salad paired with a warm soup like Creamy Tomato Basil Soup or Instant Pot Minestrone Soup. It is also delicious with a big chunk of Whole Wheat French Bread.

Ingredients
  

  • 4 Gardein Seven Grain Crispy Tenders
  • 1 5-ounce bag mixed greens
  • 1/2 red onion sliced
  • 1/2 green apple cut into strips
  • 1/4 cup blue cheese crumbles or vegan blue cheese
  • 1/4 cup dried cranberries
  • 1/4 cup walnut pieces
  • 1/3 cup balsamic vinaigrette

Instructions
 

  • Preheat oven to 430°F.
  • Line a baking sheet with a silicone baking mat or foil.
  • Place crispy tenders on baking sheet and bake in oven for 18 minutes, flipping after 9 minutes.

  • Combine the mixed greens, onion, apple, blue cheese, cranberries and walnuts in a large bowl. Toss to mix.

  • Seperate salad into two bowls, drizzle with balsamic vinaigrette and top with crispy tenders.
