Fresh Spinach: This recipe calls for frozen chopped spinach. However, fresh spinach may be used. Use one 10-ounce bag of fresh baby spinach, roughly chopped.
Greek Yogurt: Equal parts plain Greek yogurt may be used in place of sour cream.

Start with softened cream cheese
I suggest pulling your cream cheese an hour before you plan to make the dip. You should be able to gently press a thumb into the brick of cream cheese and leave a thumbprint.
Don’t skip draining the spinach
I prefer draining my spinach by wrapping the thawed spinach in paper towels and squeezing out the liquid. Some people prefer to lay the brick of thawed spinach on a few paper towels and let it drain on its own. The choice is yours.
Either way, you do not want to skip draning the frozen spinach. Otherwise, you will end up with wattery spinach artichoke dip.

If your artichoke dip is too thin, whisk in a tablespoon of cornstarch to the dip while its still hot. It will thicken as it cools down. You can also use tapioca starch in place of the cornstarch.
Make sure to start with drained and dry ingredients. Artichoke dip is typically wattery if the artichoke hearts are not drain properly or if the frozen spinach is not drained well.

Slow Cooker Spinach Artichoke Dip Recipe
Ingredients
- 1/2 cup frozen chopped spinach thawed and drained
- 8 ounces cream cheese softened
- 1/2 cup shredded parmesan cheese
- 1/2 cup canned artichoke hearts drained and finely chopped
- 1/4 cup mayonnaise
- 1/4 cup sour cream
- 1 teaspoon minced garlic
Instructions
- Combine the spinach, cream cheese, parmesan cheese, artichoke hearts, mayonnaise, sour cream, and minced garlic inside the crock pot. Mix until fully combined.
- Cook on low for 3 hours.
- Stir and serve. Serve with carrot sticks, celery, blue chips, and/or pita chips.
