Air Fryer 2-Ingredient Pumpkin Muffins

You are in for a real treat with these 2 ingredient pumpkin muffins. Simply mix together a box of spice cake mix and a can of pure pumpkin and you will end up with fresh from the air fryer pumpkin muffins in no time!

What kind of muffin cups can be used?

You can use foil, paper, or silicone muffin cups inside your air fryer. If you have a silicone egg mold, it works wonderfully for baking muffins in the air fryer. This is the egg mold set I have, I got it on Amazon.

How long do pumpkin muffins stay fresh?

Pumpkin muffins will stay fresh for 3-4 days when stored at room temperature in an air-tight container. Make sure they are fully cooled before storing them in the container.

Ingredients
  

  • 1 box spice cake mix
  • 1 15-ounce can pure pumpkin

Instructions
 

  • Preheat air fryer to 370°F.
  • Combine spice cake mix and pumpkin in a large mixing bowl.
    A bowl with pumpkin and spice cake mix in it.
  • Mix well.
    A bowl of cake mix and pumpkin mixed together.
  • Scoop muffin batter into foil or silicone muffin cups. Fill 3/4 of the way full.
    4 filled muffin cups ready to go in the air fryer.
  • Carefully place filled muffin cups inside air fryer.
  • Air fry for 15 minutes, until a toothpick inserted in the center of a muffin comes out clean.
  • Serve and enjoy.

Notes

Silicone, paper, or foil muffin cups can be used. A silicone egg mold can also be used.
