I don’t know why it has taken me so long to try pumpkin soup. Now that I have, I need to make it at least 3 or 4 times through fall and winter. It has the best savory pumpkin flavor. The pumpkin spice and cayenne bring the right balance of flavors that isn’t overpowering.

How to make easy pumpkin soup

  1. Start by sauteing chopped onions in melted butter until soft.
  2. Add some garlic and cook until fragrant.
  3. Mix in your pumpkin, chicken or vegetable broth, and spices.
  4. Let simmer for 30 minutes – this really brings out the pumpkin flavor.
  5. Puree your soup until smooth.
  6. Mix in heavy cream and serve.

What can I add to pumpkin soup for flavor?

We love using pumpkin pie spice along with cayenne pepper. 

How do you thicken pumpkin soup?

If your pumpkin soup comes out too thin, here are two options.

  1. You can let the soup continue to simmer uncovered until it thickens.
  2. You can whisk a cornstarch slurry (1 tablespoon cornstarch mixed with 2 tablespoons cold water) into simmering easy pumpkin soup to thicken.

Ingredients
  

  • 2 tablespoons unsalted butter
  • 1 tablespoon vegetable oil
  • 1 medium yellow onion diced
  • 4 garlic cloves minced
  • 4 cups low-sodium chicken broth
  • 1 15-ounce can pure pumpkin
  • 1/2 tablespoon pumpkin pie spice
  • 3/4 teaspoon salt
  • 1/4 teaspoon cayenne pepper
  • 1/4 teaspoon black pepper
  • 1/2 cup heavy cream

Instructions
 

  • Heat butter and oil in a large soup pan over medium-high heat.
  • Add onions and cook until very soft, about 5 minutes.
  • Mix in garlic and cook an additional minute, until fragrant.
  • Add broth, pumpkin, pumpkin pie spice, salt, cayenne pepper, and black pepper.
  • Bring pumpkin soup to a boil and lower to a simmer.
  • Simmer, covered, for 30 minutes. Stir occasionally.
  • Remove from heat.
  • Blend soup using an immersion blender or standing blender.
  • Mix in heavy cream and serve.
