Easy Crockpot Pesto Chicken
I love, love, love a simple crock pot recipe. You know, the ones that you throw together in the morning and completely forget about until dinner. Yes, this crockpot pesto chicken is one of those recipes.
Simply season some chicken with salt, pepper and Italian seasoning, cover it in pesto and chicken broth, and let it slow cook until the evening. Once the chicken is done cooking, shred it with two forks, top with a heaping cup of grated parmesan cheese and stir until melted.

Can I use homemade pesto?
Yes, you can absolutely use homemade pesto in this recipe! If you are looking for a pesto recipe, try this one from Mel’s Kitchen Cafe.
What kind of chicken should I use in the crockpot?
This recipe calls for either boneless skinless chicken breasts or chicken thighs. We have chicken breasts pictured (because that’s what I had on hand). However, I actually recommend using chicken thighs, if possible. Especially if you are following a recipe that calls for very little liquid. This recipe covers the chicken in liquid, so either cut of chicken will be just fine.

Is it better to cook chicken on high or low in a crockpot?
I prefer cooking chicken on low as it is less likely to dry out. If you are in pinch, you can cook on high, just check the chicken regularly and pull it out once it reaches an internal temperature of 165°F.
