Ingredients
  

  • 3 bananas mashed
  • 1/2 cup greek yogurt
  • 1 large egg
  • 3/4 cup granulated sugar
  • 1 1/2 cup all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon salt
  • 1/2 cup carrots
  • 1/4 cup pecans chopped
  • 1/4 cup shredded coconut
  • 1/4 cup raisins

Instructions
 

  • Preheat oven to 350ºF.
  • Grease and line a loaf pan. Set aside.
  • Combine the bananas, greek yogurt, and egg in a large bowl. Mix well.
  • Pour the sugar into the banana mixture and stir until fully combined.
  • In a small bowl, combine the flour, baking soda, cinnamon, nutmeg, and salt.
  • Add the dry mixture to the wet mixture and stir until just blended.
  • Fold in the carrots, pecans, coconut, and raisons.

  • Pour the batter into the prepared loaf pan and tap or shake the pan on the counter to smooth down to an even layer.
  • Bake for 50-60 minutes until an inserted toothpick comes out clean.

Notes

Leftovers can be stored at room temperature in an air tight container, up to 3 days.
