This crockpot recipe is made with simple ingredients and does not include dry onion soup mix, brown gravy mix, or cream of mushroom soup. It is made with tasty beef tips, baby Bella mushrooms, pepperoncini (for extra flavor), and a handful of spices. I show you, step-by-step, how to make everything from scratch.

Yes, there is some browning of meat and mixing of broth to be done. But trust me – it’s worth it! Taking the extra time to brown the beef tips before adding them to the crockpot makes a huge difference!

📋Ingredients

Beef Tips: Look for sirloin tips at your grocery store. Alternatively, you can purchase top sirloin and cut it into tips yourself.

Baby Bella Mushrooms: I purchased a package of pre-sliced baby Bella mushrooms to save time.

Pepperoncini peppers: Look for them in the canned vegetable aisle. They come in a jar. They do add a nice level of spice to the beef tips. You can skip them if you want your beef tips less spicy.

📖 Ingredient Swaps

Cuts of beef: The beef tips can be swapped out for beef stew meat or a cut-up chuck roast, if desired. 

​Mushrooms: White mushrooms can be substituted for baby Bella. A can of drained mushrooms also works in this slow cooker recipe.

Mustard: This recipe calls for dry mustard. However, you can substitute the dry mustard for 1 1/2 tablespoons of prepared mustard.

🔪Step-by-Step Instructions

The key to making tasty crockpot beef tips is coating them in flour and searing them on the stove first (much like our recipe for pot roast). This adds a nice crust to the meat and locks in the flavor.

Step 1: Place the beef tips and flour in a large zip-top bag. Close the bag and shake to coat the meat.

Step 2: In a large skillet over medium-high heat, melt butter. Brown the meat in batches on all sides. As the meat is seared, transfer to the crockpot.

Step 3: Add 1 cup of the beef broth to the skillet and scrape the bottom with a wooden spoon to deglaze the pan. Pour the broth over the meat in the slow cooker. Add the remaining broth, onion, mushrooms, pepperoncini peppers, Worcestershire, seasonings, and bay leaf. Cover and cook on low for 6 hours until beef tips are fork tender.

Step 4: Whisk together the cornstarch and cold water. Mix into the slow cooker and cook for an additional 30 minutes. This makes for a thicker gravy. Serve the beef tips drizzled with the gravy.

Freezing Directions

Yes, you can turn this into a crockpot freezer meal! Prepare the beef tips to the point of putting them in the slow cooker. Instead, let the meat cool and freeze in a freezer-safe container or freezer bag. 

When ready to cook, simply dump the frozen meal directly into the crockpot and cook on low for 8 hours, adding the cornstarch slurry at the end as directed.

​Easy Clean-Up

If you want to make your life easier and not spend your evening scrubbing your crockpot, you might like these slow cooker liners. They make cleanup a breeze!

If you prefer not to use liners in your crockpot, I have found spraying the inside of my slow cooker with cooking spray before adding the ingredients makes a difference. It helps prevent the food from caking on the sides and bottom so I can clean it easily after dinner. 

If all else fails, I like to volunteer one of my children to help with the dishes. 😅

💭Recipe FAQs

Can I put raw beef straight into a slow cooker? 

Yes, you can put raw beef into the slow cooker. This recipe does call for searing the beef tips first but it can be skipped if you are short on time.

Is beef tips and stew meat the same? 

No. Beef tips are usually cut from sirloin or tenderloin. Stew meat tends to come from chuck roast or rump roast. Beef tips are a more tender cut of meat. However, stew meat will work fine in this recipe since it is cooked in the slow cooker.

Is beef better at low or high in a slow cooker? 

For the best most tender beef, cook the beef tips on low.

Why is my beef so tough in the slow cooker? 

Your beef may need more time to cook. Especially if you switched the beef tips out for stew meat. Tougher cuts of meat tend to take longer to tenderize.

  • 3 pounds beef tips
  • 2 tablespoons all purpose flour
  • 3 tablespoons butter
  • 2 cups beef broth divided
  • 1 large yellow onion diced
  • 1 8-ounce package sliced baby Bella mushrooms
  • 1/2 cup pepperoncini peppers drained
  • 1 tablespoon Worcestershire sauce
  • 1 1/2 teaspoons garlic powder
  • 1 1/2 teaspoons dry mustard
  • 1 1/2 teaspoons paprika
  • 1 teaspoons ground thyme
  • 1 teaspoons salt
  • 1 teaspoons black pepper
  • 1 bay leaf
  • 1/4 cup cold water
  • 1 tablespoon cornstarch
