Easy Chicken Lettuce Wraps

I don’t know about you, but I am a busy mom of three (soon to be four) kids and I need all of the time-saving tricks I can take! I love that I can have this light and healthy dinner whipped up in just 20 minutes. It’s perfect for eating during summer because you don’t have to heat anything up!

This recipe also makes an excellent lunch for meal prep. Just store the sauce on the side until you’re ready to eat.

Making Asian Chicken Lettuce Wraps

When you’re ready to make these lettuce wraps, I like to line all of the lettuce leaves up, first. Then, you can go one by one adding the chicken, cashews, and chow mein noodles. Finally top with the yummy P.F. Chang’s Teriyaki sauce.

Another way to do it is making it more of a “build your own” and let your family make it the way they like it. This is a great way to get your kids trying new flavors and opening themselves up to new things.

If they want to stick their hand in the bowl to sample the crunchy noodles or nuts – let them! You might be surprised by what they decide to put on their plate.

Low Carb Asian Chicken Lettuce Wraps

What to serve with shredded chicken lettuce wraps?

Ingredients
  

  • 2 cups leftover rotisserie chicken shredded
  • 1/2 cup crunchy chow mein noodles
  • 1/2 cup teriyaki sauce we recommend P.F. Chang's Home Menu Teriyaki Sauce
  • 1/4 cup roasted and salted cashews chopped
  • 4 large leaves romaine lettuce

Instructions
 

  • Arrange each lettuce leaf on a flat surface or plate.
  • Add 1/2 cup chicken to each lettuce leaf.

  • Evenly divide the chow mein noodles and cashews on top of the chicken.
