To make air-fried red potato wedges you will need the following ingredients: 

  • Red potatoes: Choose baby red skin potatoes if you can for this recipe. If not, cut them into 1 1/2-inch pieces.
  • Garlic Powder: I use powder over fresh because it adheres well to the potato and is easy to evenly distribute over all of the potatoes.

📖 Ingredient Swaps

In this recipe, we use a classic combination of rosemary, thyme, and garlic; but there are many other flavor combinations that will taste great with red potatoes. Here are some ideas: 

  • Lemon pepper seasoning can give you delicious Greek-style potato wedges.
  •  A mix of garlic powder, mild chili powder, salt, and black pepper is fantastic together.
  • Taco or fajita seasoning mix is also delicious on baby potatoes.
  • Fresh rosemary with onion powder is another yummy combination. 

You can also swap out fresh herbs for the dry herbs if you have them on hand.

🔪Step-by-Step Instructions

Making baby red potatoes in the air fryer is really simple.

Step 1. Toss potatoes, olive oil, and spices in a large bowl. Mix until evenly coated.

Step 2. Arrange potatoes inside the air fryer basket in a single layer.

Step 3. Air fry for 10 minutes. Stir, and air fry for an additional 10 minutes.

Season your potatoes

The best recipes use enough seasonings. When I say seasonings, I specifically mean salt.

Salt brings out the flavor of your dish and will leave it tasting bland if there isn’t enough salt. Make sure to taste-test the potatoes after they finish cooking. If you don’t taste a pop of flavor, add a bit more salt.

Pick the perfect potato

Look for firmness: Choose red potatoes that are firm and not too soft when you gently squeeze them. Avoid potatoes that have soft spots or are mushy to the touch, as these may indicate spoilage.

Check for smooth skin: Examine the skin of the red potatoes and choose the ones with smooth and unblemished surfaces. Avoid potatoes with cuts, bruises, or discoloration.

Check for sprouts: Don’t buy red potatoes that have long or numerous sprouts. While small sprouts are generally harmless, excessive sprouting can indicate aging and may affect the flavor and texture of the potatoes. If your potatoes do have a few sprouts, simply carve them out with a spoon before cooking.

Do I boil potatoes before air frying?

Boiling potatoes is not necessary for this recipe as we are cooking potato wedges. However, it can be helpful to boil whole potatoes prior to cooking them in the air fryer. This ensures they are tender on the inside and crispy on the outside.

Can you put aluminum foil in an air fryer?

Yes. You can use anything oven safe in the air fryer.

How to reheat cooked potatoes in the air fryer?

Preheat the air fryer to 300°F. Place cooked potatoes or french fries inside the air fryer in an even layer. Cook until warmed throughout, checking every 3-5 minutes.

How to store leftover potatoes? 

Store any uneaten potatoes in the refrigerator in an airtight container, up to 3 days.

Ingredients
  

  • 1 pound baby red potatoes quartered
  • 3 tablespoons olive oil
  • 3/4 teaspoon salt
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried rosemary

Instructions
 

  • Preheat the air fryer to 400°F.
  • Combine potatoes and oil in a large mixing bowl.
  • Mix well, until potatoes are evenly coated with oil.
  • Add salt, garlic powder, thyme, and rosemary to the bowl of potatoes. Stir again, until seasonings are evenly distributed on potatoes.
  • Place potatoes inside the air fryer and air fry for 10 minutes.
  • Stir potatoes and cook an additional 10 minutes, or until crispy and fork tender.

Notes

For best results, enjoy these potatoes as soon as possible. Leftovers can be stored in the fridge. However, they will lose their crispiness. To reheat, warm in the air fryer at 300°F.
